Just because one of your PCs has one of the demi-human starting occupations does not mean they have to be the demi-human class. My first reservation is the authors' choice to merge race and class. Joseph once said on the forums that he expected a character to require one full year playing every week, that is 52 sessions to get to 5th level.

Personally, I think the question of "level caps" is kind of arbitrary. Whether a game system has 5,10, 20, or 100 levels is irrelevant: a cap is a cap.
