If you really want to use luck this way then perhaps just house rule that you can use Luck to change your own AC against a single attack. So, if a monster hit by a margin of 3 you could spend 4 luck to negate the hit.

Personally, I think the best way to look at it is that a player who announces they want to burn luck on the roll before they roll the dice isn't breaking any rules - but there is no requirement they do so. The game works fine with all luck burning happening after rolls, something about the rule also...

Excellent! I note that even with the "fewer" lines of spells, this wizard sheet carries you well up to 7th level or so (depending on whether you need multiple lines for anything).

Why not just give a "full defense" option that precludes any other action and automatically gives a bonus to all defenses (say +2?) Don't allow it if the character moves or does any other action on their turn. I'm not sure the extra rolls are adding that much to the experience at this poin...
